Description

A terrific tomato soup (and I historically don't like tomato soup, but I would have a mug of this one any day).  Recipe courtesy of Nija Joshi.

Ingredients

4  
tomatoes (beefsteak preferred)
5 clv
garlic
   
rosemary (as desired)
   
basil (as desired)
   
thyme
4 oz
Butter
1 t
cumin powder
   
salt & pepper
3 c
broth (vegetable or just water)
   
chilie powder (if you want some spice)

Instructions

  1. Preheat oven to 450 C
  2. Chop up the onions into quarters and lay them in a baking pan.
  3. Make long cuts on the tomatoes and place them in the baking pan as well.
  4. Add the garlic cloves and all the fresh leaves in the baking pan and put them in the oven to roast for about 20-30 mins.
  5. Cool the ingredients from the oven and once cooled, blend them all.
  6. In a pot, melt the butter and add the broth.
  7. Add the blended ingredients and the spices.
  8. Cook for 20 - 25 mins and depending on the consistency of the soup that you want, you can either add more water or serve as is.
