Ingredients

large potatoes ((1lb/500g)) 3
green onions 1⁄4 c
chopped fresh coriander 1 T
dijon mustard 1⁄2 t
Salt 1⁄4 t
grated lemon rind, pepper and hot pepper sauce 1
egg (beaten) 2 cn
salmon (drained and flaked) 2 T
vegetable oil 4
lemon wedgesInstructions
Instructions:
- Peel and cut potatoes in half crosswise
- In 6 cup microwaveable dish, cover and microwave potates with 1 cup water at high for 10 minutes or until tender
- drainIn large bowl,
- mash potates until smooth, star in onions, coriander, mustard salt, lemon rind, pepper and hot sauce
- Blend in egg
- fold in salmon
- let cool for 5 minutes
- using hands shape into 8, 2cm thick patties
- in large nonstick skillet, heat half of the oil over medium heat
- cook 4 of the paties for about 5 minutes per sideor until golden
- repeat with remainigng paties
- serve with lemon wedges
