Ingredients

2  
large potatoes ((1lb/500g))
3  
green onions
1⁄4 c
chopped fresh coriander
1 T
dijon mustard
1⁄2 t
Salt
1⁄4 t
grated lemon rind, pepper and hot pepper sauce
1  
egg (beaten)
2 cn
salmon (drained and flaked)
2 T
vegetable oil
4  
lemon wedges

Instructions

Instructions:

  1. Peel and cut potatoes in half crosswise
  2. In 6 cup microwaveable dish, cover and microwave potates with 1 cup water at high for 10 minutes or until tender
  3. drainIn large bowl,
  4. mash potates until smooth, star in onions, coriander, mustard salt, lemon rind, pepper and hot sauce
  5. Blend in egg
  6. fold in salmon
  7. let cool for 5 minutes
  8. using hands shape into 8, 2cm thick patties
  9. in large nonstick skillet, heat half of the oil over medium heat
  10. cook 4 of the paties for about 5 minutes per sideor until golden
  11. repeat with remainigng paties
  12. serve with lemon wedges
