Cassoulet (Baked White Beans)

Description

Baked beans were never so good as when Mamie Kersava (Steph's grandmother) makes them.  Here's her recipe.

Ingredients

500 g
white beans (soaked in cold water overnight (12 hrs))
3  
onions
3  
carrots
3 clv
garlic
1  
bay leaf (Laurier leaf in French)
1 bn
parsley
1 bn
thyme
1 cn
small can of tomato puree
200 g
back bacon (Lard in French)
1  
garlic salami (dried sausage)
5  
fresh sausages (brand Stoeffler Hénaff preferred)

Instructions

  1. Starting with a cold pot, add all ingredients minus the meats. 
  2. Cover well with 4-5 cm of cold water.
  3. Boil for about an hour on low heat.
  4. Add the meat.Cook for another 1/2 or 3/4 of an hour.
  5. Don't over salt as the sausages and bacon will also be salty.
