Pumpkin Pie

When I was living in Galway, Ireland, Thanksgiving would come and go and I would be left wishing for some good old fashioned North American Pumpkin Pie.  My fellow Canadian pie craver Michel Durham offered up this easy recipe for preparing a pumpkin pie from scratch.  I was not disappointed.

Time for preparation: 2 hours

Ingredients:

1.5 cups Peeled & cubed butternut squash
1 cup lightly packed brown sugar
2 tbs cornstarch
1 cup evaporated milk
1 egg beaten
1 tsp ground cinnamon
a tiny bit of all spice, ground cloves, ginger, nutmeg
an already made pie shell

Instructions:

  1. Cover over squash in slightly too much water and boil, then simmer until squash is soft. Drain and allow to cool.
  2. Blend - cooled squash, brown sugar, cornstarch & all other ingredients until smooth.
  3. Pour into pie shell
  4. Bake at 175°C for about 50 minutes (test with spaghetti strand - if pulls out clean it reveals a cooked middle).
