Mushroom Soup in the microwave

Time for preparation: 15 minutes

Ingredients:
38g / 1 1/2 oz butter
1 small onion, peeled and finely chopped
225g / 18oz flat mushrooms, sliced
25g / 1oz flour
250 ml / 1/2 pint milk
500 ml / 1 pint hot chicken stock
Salt and freshly ground pepper

    1.    Place the butter in a large bowl.  Microwave, uncovered on high for 1 minute.
    2.    Stir in the onion and microwave uncovered on high for 3 minues.
    3.    Add the mushrooms and microwave, covered, on high for 4 minutes.
    4.    Stir in the flour and graudually blend in the milk and stock.  Microwave uncovered on high for 4 minutes.
    5.    Puree and adjust with seasoning to taste.
